Eating dessert is all about being healthy… you shouldn’t feel like the monster from the bog every time you indulge. Here’s a light and fresh way to enjoy dessert!
3 Cups fresh or frozen blueberries
1/2 Cup almonds
1/2 Cup pecans
1 Tbsp coconut sugar (or brown sugar)
1 Tbsp coconut oil
*Preheat your oven to 375F. In a food processor or high-speed blender, blend the almonds and pecans until they are a small crumble. Stir in the coconut sugar and oil and you’ll notice that some parts of the mixture begin to stick together. Add the blueberries and stir until they are lightly coated in crumble. Transfer the mix to a medium sized baking dish and bake for 30-35 minutes, being careful not to burn the top.
