Recipe: Black Bean Burger


Summer is here and we want to look good! BUT, we also want to be able to enjoy the yummy food we are faced with at BBQs. Get rid of those typical grocery store burgers and try this black bean burger recipe to switch it up a bit! PS – This is the first veggie burger I’ve made that actually turned out right! That’s exciting, and it’s pretty good, too!

2 Cups black beans, drained and rinsed

1 Cup cooked quinoa

1 Cup carrots, finely chopped

1/2 Onion, chopped

2 Eggs

1 Tsp olive oil

1 Tsp garlic powder

1 Tsp cumin

1 Tsp coriander

2 Tbs oregano

Pepper to taste

*Preheat your oven to 350F. Combine all ingredients in a food processor or high-speed blender until evenly combined. Roll into 4 large balls and then press into patty shapes. Place the black bean patties on a baking sheet and bake for 15 minutes, then flip them over and bake for another 15 minutes. Enjoy on lettuce or a bed of spinach along with burger toppings!
